Beau’s (Original Caesar Salad Recipe (Dressing & Croutons)

  Beau’s (Original Caesar Salad Recipe (Dressing & Croutons)

(Homemade Caesar Dressing and Caesar Croutons)

Ingredients:

Olive oil
Red Wine vinegar
12 Cloves fresh garlic
2 eggs
Romaine Lettuce
Fresh grated Parmesan cheese
1 Lemon
Worcestershire sauce
Salt
Bread slices (Sourdough is great to use also, French bread.
Anchovies (optional)

Prepare Seasoned oil a day in advance
Combine:
Olive oil
12Garlic cloves ( smash on cutting board then minced very fine)
add to Olive oil, then let it stand at room temp. for at least 24 hrs.
(This Olive/garlic Oil can be used to sauté meats, seafood or vegetables too. (Good to have on hand.)

Caesar croutons

Bread slices (cut into small squares.)
Grease a baking sheet with seasoned oil,
Place bread pieces on the baking sheet, brush with seasoned oil.
Bake: low heat, 225* 2 hours. Sprinkle Parmesan cheese, cool and place in a covered jar until ready to use.




Beau’s Caesar Dressing

1/2 cup garlic/olive oil
1/2 cup red wine vinegar
2 coddled eggs
1 tablespoon Worcestershire sauce
Juice of 1/2 a lemon

Blend in a blender at low speed about 5 seconds. Refrigerate until ready to serve salad.
Break Romaine lettuce into 1 to 2 inch pieces and chill in a bowl of Ice water for about 15 minutes. Drain thoroughly then place in refrigerator until ready to use.

Ready, get set and serve!
Place chilled Romaine Lettuce in a large serving bowl pour in half of the Caesar dressing, toss making sure all lettuce has a film of dressing, add more dressing if needed then add croutons toss it around again.
Grade fresh Parmesan cheese, over each individual serving.

Optional: garnish with 2 anchovies or small shrimps.
