You need:
450 g(1 lb)- Chestnuts
450 g(1 lb)- Cater sugar
150 ml(5 fl oz)- Water
A few drops Vanilla essence

Method:
1. Peel the chestnuts and boil them in water for a few minutes until the skins come off easily, then boil them gently until they are soft but not broken.

2. Dissolve the sugar in the water whit the vanilla essence then boil until the mixture thickens to a syrup.

3. Add the chestnuts and bring back to the boil for 4 minutes.

4. Carfully remove the chestnuts from the syrup whit a slottet spoon, bring the syrup back to the boil and continue boiling until the syrup thickens again.

5. Replace the chestnuts and boil again for 3 minutes.

6. Drain and serve or store the syrup in a airtight jar.

I've never had Marrons Glaces. It sounds really good. I don't understand what you mean by boiling the nuts until they are soft, but not broken. Do you mean, just before they break because they are soft? Well, I'm gonna try to make them and enjoy them. Talk to you later.
