Banana Bread with Cranberries & Nuts (both optional)

1/2 Cup butter, softened
1 tsp. vanilla extract
1 Cup sugar
2 lg eggs
1 1/3 Cup mashed bananas
1 Tbs. milk
2 Cup all purpose flour
1 tsp. baking soda
1/4 tsp. salt
1/2 Cup chopped nuts and/or choc. chips(optional)
1 Cup dried fruit or cranberries (optional)

Cream butter, vanilla, and sugar in large bowl until light and fluffy. Beat in eggs. Combine bananas and milk in bowl.

Mix flour, soda, and salt in separate bowl. Add dry ingredients to creamed misture alternately with banana mixture, beating well after each addition. Stir in nuts and fruit.

Pour into greased 9x5x3 inch loaf pan. Bake in 350 degree oven for 1 hour and 10 minutes, or until bread test done. (toothpick inserted in center comes out clean) Cool for 10 minutes in pan. Turn out of pan; cool completely. (You may wish to take a plastic/rubber spatula and separate from pan edges prior to turning out. Yield: 1 loaf.

LOL... yes, you can put both in... lol. I did it that way too. Just use a little less otherwise there's too much "stuff" and not enough bread to hold it all together. I made that mistake too. LOL

This sounds SO good. Can I put both nuts AND Chocolate chips in it? xD hahahaha...thats me in a nutshell..ditch the fruit and eat the fattening stuff. <3
I HAVE to try this now....I think our Bananas are JUST right for it.

You're in culinary? So is my son! He goes to Baker College and loves it. He's already a great cook, but he'll be a master chef someday! What is your specialty? What do you like to cook the best? And if you make this recipe... let me know how you like it. Sometimes, I add chocolate chips too! LOL

I have never had banana bread with cranberries, but it sounds so good right now. I'll have to make for my family and for my classmates in culinary. If culinary has to sell food again I will sell this and I bet we'll make so much money.
