My Answer to the Veggie Challenge:Beet This!
When I was a little girl, my mother said to me:
"Eat all your veggies, little Bunny, and
you'll grow up big and strong like me!"
My first memory of veggies,
(Not fond, of course),
was of orange colored squash,
followed closely by zucchini,
and for variety spinach!
"I don't like them, mom!" I cried.
To which she looked at me,
shrugged shoulders
and sighed: "At least I tried".
As I grew older,
(and grew teeth with which to chew).
Mom continued to introduce me to
more veggies than I knew grew!
There were turnips
(great with roast and gravy),
Carrots, which I love to crunch
(especially the variety "baby").
Beans of every type
and color I can eat (except the lima),
and tomatoes, lettuce, corn and beets,
to me are just-afina!
Cabbage, peas, cucumber and garlic,
all belong on my "okay to eat" list,
While swiss chard, eggplant, parsnips and okra
stay on the proscribed veggie list,
"Not to eat, not even if necessary to exist"
Yams I haven't figured out as yet,
I hear there's multi ways to prepare them.
It's hard for me to swallow, though
as they're some kind of squash (and I don't eat THEM).
But my favorite vegetable by far,
the one I eat most often,
is the spud, the prince of veggies
cooked perfectly 'til they soften.
Whipped with dill or parsley,
and butter, milk and cream cheese,
or fried, roasted, baked or scalloped,
Potatoes never fail to please.
And so, I must conclude this little ditty,
Some pro-tofu group is threatening to eat my kitty!
