Ginger Sweet Salmon

Sweet Ginger Salmon Steaks
Pink and oh so very good!
May I please have some more?
I'd love it if I could!

The taste is kind of sweet
with a bite of ginger too
It melts now in my mouth
I think I'm hooked, aren't you?

I should really thank my Dad
Because he made them for dinner
and it's the best I've ever had!

Man, when I said that my husband could cook salmon... I wasn't kidding! LOL.

Earlier today I told him that he could cook Salmon the best I've ever had. I was serious, of course, and half-way hinting that it would be great if he cooked dinner tonight. I'd been cleaning all day and was just plain pooped!

He, being the amazing husband that he is, quickly volunteered... eager to show off his expertise in the kitchen. Now, you must know, that he is extremely competitive and he knows full well that my grandfather was a chef and that my mother is a TOP NOTCH cook herself. He is well aware that I grew up with the best food in the world (as if it isn't obvious by my the "generous" physique I am unable to shake). I love food and it shows, is what I'm trying to say! LOL.

Don, wanting to live up to whatever standards he believes to exist in my mind, will not be outdone.
So, he looks up an awesome recipe on the net, prints it, and proceeds to go to town. A little clinking around in the kitchen, a slight bit of smoke fingering through the air, and a few waves of the towel at the smoke detector from Gary later... and we have dinner ready to go.

Not that he doesn't always cook something great when he cooks, but this time he really set the bar even higher. Every mouth-watering bite had been thoroughly savored, and in-between every bite I mumbled something about this being REALLY GOOD. I just wanted to emphasize that point in case he didn't hear me the previous 10 or 20 times. LOL.

I had to take a few pics of my son, Gary, as he enjoyed his first bites as well.

The sweet blend of brown sugar and freshly ground ginger glazed over the juicy salmon was definitely mouth watering. I'll include the recipe here for anyone that wants it...

GINGER SWEET SALMON...

1/4 C Packed Brown Sugar
2 Tbsp Dijon Mustard
1 Tbsp Grated Fresh (or 1 tsp ground) Ginger

1) Coat rack of broiler pan with cooking spray. Preheat broiler.

2) In small bowl, whisk sugar, mustard, and ginger. Season both sides of the fillets with salt and pepper. Place salmon on broiler rack and brush glaze on top. Broil (6" from heat) 8-10 minutes or until fish is lightly browned and opaque.

3) Serve each fillet on top of a lightly dressed mixed green salad.

Makes 4 servings

Per Serving (without salad): 340 cal, 31 gr pro, 14 gr carb, 17 gr fat, 3.5 gr sat fat, 90 mg chol, 0 gr fiber, 485 gr sodium

Prep Time: 10 minutes

Cooking Time: 8-10 minutes

This is cute. I love the pictures! As for the salmon, it sounds good, but I'm not a fish eater, other than fish sticks. I try, but can't quite bring myself to enjoy. Seems when I was little, parents were bowling or something, and my big sisters made fish for dinner. My brother started to choke on a bone, and it scared the fish-eating-desire right the heck out of me! Like I said, I try, but chewing it until there is no flavor left in it (to be sure there are no bones) is yucky!! This sounds good, but give me a prime rib of beef any day!

Thanks for this, Mary.
We eat a lot of salmon steak in our house, and are always looking for new ways to prepare it. I think we'll try this one tomorrow. (by we, I mean my lovely wife. I can't cook; I can't even boil water)
