Honey BBQ Chicken

This is a recipe that I learned in High School, but have modified to make it more simple.

Honey BBQ Chicken:

4 boneless chicken breasts
8 pieces of bacon (Use turkey bacon to make more healthy).
1 C Honey BBQ Sauce
4 toothpicks

1. With your palm or a meat tenderizer, flatten out the chicken breasts.

2. Roll one chicken breast into a ball. There should be a round, smooth side of the ball and a "rough side" where the edges of the chicken breast do not form a smooth, round surface.

3. Wrap a piece of bacon with the ends meeting at the un-smooth surface and secure with a toothpick.

4. Take a second piece of bacon and wrap it around the chicken, criss-crossing it with the first piece at the bottom. Push the ends over the toothpick, securing them down.

5. Repeat steps 2-4 with remaining chicken breasts. Place the chicken on a broiling pan.

6. Broil chicken in oven on low until chicken is almost done, about 15-20 minutes. Pull the chicken out of the oven and baste with honey BBQ sauce. Continue broiling until chicken is completely cooked and bacon is crisp.

7. Serve the chicken with your favorite side dish! I suggest serving with a salad and garlic bread, as those are my favorite things to put with barbecued foods.

Pluses of this recipe: The chicken always comes out juicy no matter how long you leave it in. I still have yet to find someone who DOESN'T like this recipe. This recipe would also be fun for kids to make (with some adult supervision, of course)!

Negatives of this recipe: Sometimes during cooking, the top of the bacon does tend to get burnt from cooking faster than the rest of the chicken. You can just break it off, however and it'll be fine.
