Pig-Pickin' Cake

This is one of the best cakes you will ever taste if you like pineapple and coconut. Don't ask me who gave it the name pig-pickin' unless it was first invented to accompany what we southerners call a pig-pickin' where you take and cook a pig on a big ole grill outside. Everyone brings there own favorite side dish and drink. It is like a big picnic for the neighborhood. Hope you enjoy as much as we do..

1 boxed cake mix (unless you are industrious enough to mix your own up)

1 can crushed pineapple (15 oz)

1 small can of shredded coconut

1 pkg of cream cheese (7oz.)

1/2 cup of chopped pecans

1 container of whipped cream (8oz.


While your cake is baking,prepare your icing by mixing the cream cheese and the whipped cream together. The mixture should be nice and thick. Spoon in the pineapple(drained) and the coconut along with the nuts.

The mixture should be thick enough that you can spread it on your cake layers with out running.

Try different textures until you find one that works for you.

Don't throw that pineapple juice away. Take and spoon it over the layers while they are cooling and before you ice them.

This cake needs to be refrigerated.( that is if there is any of it left over)
