I threw this together, making it up (and praying) as I went. Even my husband, who isn't a meatloaf fan, asked for seconds. Therefore... I decided to share. :-)

**1-lb lean ground beef

**1 medium onion, chopped and microwaved in a couple tsp water for one minute (or sauteed in butter/margerine/whatever) to soften

**1 medium apple (I used a Granny Smith), peeled and cored, diced fine

**One medium potato, diced into pretty small chunks (I used a Yukon Gold)

**1/4 cup (+/-) undiluted tomato soup

**1 large egg, beaten

**1-cup plain bread crumbs (seasoned ones would probably work well, too)

**Salt and pepper to taste (heck, any of your favorite spices to taste)


Mix all together and mash into a 2qt casserole dish sprayed with non fat cooking oil (my 2-Qt dish is round ... it was very pretty; Martha Stewart would be proud :-) ).

Bake at 350 F for about one hour.

Easily feeds four, maybe more... or less... depending how many teenage boys or pond hockey players are at your table.
