Breakfast in a Crockpot

Great news! You can make breakfast in a crockpot!

Picture this: A large group of relatives has descended upon your home for a special celebration. You've faced the usual dilemma. Should you stay up late visiting with the relatives knowing that the next morning you'll be faced with fixing breakfast for the entire brood? Should you retire early for the night, because you have to get up at the crack of dawn to prepare enough food to feed that army of relatives? Can you dare offer them just cereal, fruit and milk, saving preparation time?

As these thoughts run through your mind, you decide to check your favorite site, Prose-n-Poetry, to see if someone has a brilliant idea to solve your problem. Someone does! You can make breakfast in a crockpot!

Crockpot Western Omelet Casserole

Serving Size : 12

You'll need:
32 ounces Hash Browns, frozen
1 pound Ham, extra lean -- cooked & cubed
1 medium Onion -- diced
1 medium Green Bell Pepper -- diced
1 1/2 cups Monterey Jack cheese -- shredded
12 Eggs
1 cup Milk, skim
Salt and pepper to taste

Place a layer of frozen hash browns at the bottom of the crockpot. Follow this with a layer of ham, then onions, green pepper and cheese. Repeat the layering process two or three more times, ending with a layer of cheese.

Beat eggs, milk and salt & pepper together. Pour over the mixture inside the crockpot.

Cover and turn on low. Cook overnight (6 hours or more).

The next day, you'll be able to enjoy your company and breakfast without the fuss!

This meal doesn't have to be for breakfast, of course. You can also put the ingredients in the crockpot early on Sunday morning and then invite friends for brunch.

Don't you just love crockpot meals? They do make entertaining much simpler and enjoyable for all!
