The much-maligned dandelion is, besides being quite cheery, a source of many nutrients and very healthy for humans when used in moderation. As with any "alternate health" addition to your routine diet, if you have health problems, check with your doctor first.

GRAMMY'S PENNSYLVANIA DUTCH (That is to say, measurements are "abouts" not "exacts") HOT BACON DRESSING
Gather four or five loose cups of dandelion leaves (cut around the bottom of the whorl and DO NOT gather from chemically treated lawns) ; wash thoroughly and drain thoroughly.
Chop up two or three pieces of bacon into bite size pieces; cook to desired doneness.
While the bacon is cooking, beat together:
One egg
About two Tablespoons flour (depends on how much bacon fat you have in the pan and how much dressing you want to make)
Salt to taste
Add sugar and vinegar to taste
Add about 1-1/2 cups water (fills a SMALL size mixing bowl)
Pour the dressing over the cooked, undrained bacon; cook and stir until the dressing thickens
Add dandelion greens (or spinach--or both!), stir gently until wilted and hot (You may think you have too many greens, but they shrink as they wilt)
