Muffins
(Basic and Variations)
Sift into a mixing bowl:
2 cups pastry flour or 1 7/8 cup all-purpose flour
3 tsp. baking powder
1/2 tsp. salt
1/2 cup sugar
Mix in another bowl:
1 egg
1 cup milk
1/4 cup melted butter
Pour liquid mixture over flour mixture. Stir only enough to dampen the flour. Spoon into buttered muffin tins, making the tins about 2/3 full. Bake 15 minutes at 400 degrees, until a little brown on top and a toothpick inserted in one comes out clean.
Variations:
For low-fat muffins, substitute 1/4 cup apple sauce for the melted butter.
For fun, I add about 3/4 cup of fruit, like chopped apple, berries, or chopped peaches. Instead, you could add 1 cup of raisins. Another possibility is 1/2 cup of chocolate chips, butterscotch chips, or white chocolate chips and/or nuts. A teaspoon of cinnamon in the batter is heavenly, as is a sprinkle of cinnamon sugar on top. You could also add 1/2 cup of cocoa for a chocolate muffin. Sometimes I include with the cocoa, 1/2 cup of chocolate chips for a double-chocolate muffin.
