Stuffed Chicken Breasts-Hawaiian Style

2/3 c. hot water
2T. margarine
2 c. Stove Top dressing, chicken flavor
1 (8 1/4-oz) can crushed pineapple with syrup
4 chicken breasts, boneless
(halves pounded to about 1/4 in. thick)
1/2 med. green pepper, chopped
1/2 med. red pepper, chopped
2 T. brown sugar
2 T. vinegar
1/4 tsp. ground ginger

Heat oven to 400 degrees. Mix hot water, margarine in bowl, stir in stuffing mix, pepper, half of the pineapple and syrup. Spoon stuffing evenly over the chicken, roll tightly. Secure with a toothpick. Place in a 9-in. square pan with remaining stuffing in the center. Mix remaining pineapple, syrup, sugar and vinegar along with the ginger. Spoon over the chicken. Bake 30 minutes or until thourougly cooked.

I just can't get enough chicken recipes... I guess that's why I'm always on here looking for new ones. This sounds so good... I'm surly gonna have to try this one soon!
