1 chicken (2-3 lb. cut up and skinned)
1 large onion, chopped or sliced
4 large white potatoes cut into pieces
1-16 0z. can diced tomatoes
1-10 oz can tomatoe sauce
green chili peppers to taste
2-3 sprigs cilantro
salt and pepper to taste
place chicken and onion into a dutch oven, cover with water. Bring to a boil and reduce heat to medium, cook for about 20 minutes.
Add the potatoes tomatoes, cilantro and green chili peppers. Stir in tomatoe sauce. Salt and pepper to taste.
Continue cooking on medium heat until the potatoes are tender. Served with homemade corn tortillas this makes a great cold weather meal.
