This is my favorite pancake recipe, a must for lunch on a snowy Saturday afternoon.
Jo's Pancakes
2 eggs
2 T. melted butter or oil
2 c. milk
2 c. flour
2 tsp. baking powder
4 T. sugar
1/2 tsp. salt
Beat eggs, shortening, and milk in a large bowl until well blended. Add dry ingredients and mix just enough to make a creamy batter with some lumps.
For a low fat version, substitute 2 T. of apple sauce for the melted butter or oil. It works well.
