Friendship Soup
by Jo Janoski (Age: 59)
copyright 08-26-2002

Age Rating: 7 to 127

Friendship Soup

1/2 cup dried split peas
1/3 cup beef soup base (vegetable or chicken
can be used also)
1/4 cup pearl barley
1/2 cup dried lentil beans
1/4 cup dried minced onion
1/2 cup of long grain rice
2 tsp.Italian seasoning
1/2 cup macaroni
1 pound cooked Hamburg (or cooked chicken)
1 28 ounce can diced tomatoes,undrained
3 quarts of water

Combine all ingredients except macaroni and simmer until the beans are
soft. During the last 10 or so minutes of cooking add the macaroni
and cook until macaroni is done. This will make enough soup to feed 6
to 8 hungry men.

Note: For a gift: Layer the leftover dried ingredients using the same
measurements as recipe, in a nice decorative jar. Make a copy of the
recipe and pass it along to a friend.

I love the idea of friendship soup. Would have never thought to put it in a decorative jar for someone but now it's like ... Huh, Why didn't I think of it! This is a great idea and recipe. Thanks for sharing!

Jo,
I've made this, and can vouch that it is truly delicious and hearty--and it really does make a terrific gift. It freezes pretty well, too. :)
