Old Settlers' Bean Soup
To the slow cooker add:
1 lb. ground chuck, browned and drained
1 onion, diced
3/4 lb bacon that has been fried and crumbled
1 can pork 'n beans
1 can butter beans, not drained
1 can dark red kidney beans, drained
1/4 cup catsup
1/4 cup barbecue sauce
1/4 cup brown sugar
1/4 cup white sugar
1 tablespoon liquid smoke (optional)
3 tablespoons white vinegar
dash black ground pepper
1 tsp or more chili powder
2 tablespoons prepared mustard
Stir all ingredients together. Cook in slow cooker on low for 6-8
hours.
The bacon can be eliminated (for the health-conscious) and the recipe is still delicious. Try serving with corn bread!
