Pudding Cookies
by Janet Burl
copyright 09-22-2002

Age Rating: 7 to 127

preheat oven to 375 degrees F.

2 boxes instant pudding (what ever flavor you prefer)
1 1/2 Cup melted butter
1/2 Cup sugar
1 Cup brown sugar
1 1/2 tsp. vanilla extract (or whatever flavor goes with the pudding mix)
3 eggs
3 1/3 Cup flour
1 1/2 tsp baking soda
2-3 Cups chips (chocolate, peanut butter, mint, butterscotch, etc.)

mix together, in order of ingredients, drop onto cookie sheet (i use baking stones) by tablespoon full.
bake 10 minutes. then enjoy

i have done:
-pistacio with walnuts
-chocolate with peanut butter chips, or white chocolate chips or mint chips
-vanilla with butterscotch or choc. chips
-butterscotch with same chips
-vanilla with almond extract and almond chips (my favorite)
-lemon with lemon extract, grated lemon(for color) with white choc. chips (the kids favorite)

the possibilities are as limitless as your imagination. if you want to keep the sugar down, use the sugar free instant pudding mix.

Did somebody say pudding and cookie, those two words together could mean trouble for my teeth! Ha Ha! I will try this... Oh Yeah!

This seems like one of those easy recipes that you don't have to go to the shop to get the ingredients for.
Sounds good, I'll print it out at the library!

These sound delicious. I have heard of pudding cakes, but never pudding cookies. I'll bet they are really moist.
