Sailor Venus's fav chicken curry

1 small chicken, cut into pieces with skin & fat removed (can use all legs, breast, or ground chicken also)

1 cup flour

2 tablespoons powdered curry

1 to 2 tablespoons light cooking oil

1 cup chopped onions

1/2 cup chopped green pepper (or sweet red pepper, celery, carrots, etc.)

1 clove minced garlic

4 to 6 tablespoons of curry paste or powder

1 tablespoon of water or oil, if needed

salt & pepper to taste (optional)

ginger zest or lemon zest (optional)

4 to 6 medium potatoes cut into chunks (optional)

2 cups chopped tomatoes (fresh, canned, or frozen)

1 to 2 cups water or chicken broth

1 cup frozen peas (or green beans or corn)

1/4 cup plain yohgurt

rice (in whatever serving you prefer)

roti or pita bread

preparation:

lightly dust chicken with mixture of flour and the 2 tablespoons curry; then brown in the cooking oil in a large nonstick pan on medium heat. remove and set the chicken aside.

place onion, green perpper, garlic and the 4 to 6 tablespoons curry to the hot pan the chicken was browned in. cook for three to four minutes on low heat; add salt, pepper, and ginger (or lemon) zest. add the additional water or oil if the mixture appears dry.

add potatoes, tomatoes, and water (or chicken broth) to the adove ingredients in the pan. bring this to a low boil and cook until the potatoes are tender. add the browned chicken to the pot and simmer for at least one hour.

before serving, add the peas and simmer for five to ten minutes.

yohgurt can be added to the sauce, but be careful that it doesn't curdle.

serve with rice and scoop with roti or pita bread ^_^ yummilicious!
