Recipe for Messy Pierre’s or Vegetable Sloppy Joe's!
by Ellen Guidry (Age: 71)
copyright 12-18-2002

Age Rating: 7 to 127

Or you Might call it a vegetable Sloppy Joe!

Ingredients:

Use the ingredients listed on the package of Sloppy Joe Mix from McCormick except replace the ground beef or turkey with two to four cups of fried okra. (See Okra Frying instructions below).

Add some of the following ingredients to individualize!

A sprinkling of Hickory Smoked Salt (McCormick’s)
1 tsp. Season All
2 T. ketchup
1 or 2 T. Picante Sauce (Med.)
1 tsp. Tobasco
1 to 2 T. Brown Sugar
1 T. Worcestershire Sauce
Salt and black pepper to taste (If needed)

Method:

Cook all ingredients together for 15 to 30 minutes on low temperature, stirring occasionally to be sure it isn’t sticking. Add a little more water if necessary.
Serve over hamburger buns as you would Sloppy Joes.
Enjoy your Messy Pierres!

To Fry Okra:

Cut the time of frying okra down by starting it in the microwave. Place four to six cups of okra that has been
washed and cut into ½ inch pieces in a Microwave safe covered bowl, i.e. Pyrex bowl. (Lid must be loose
so it can vent.) Microwave it for 25 minutes or more, but
only 4 or 5 minutes at a time stirring in between times. Once the slime is gone and the okra is starting to brown,
place the okra in a Teflon-coated skillet with about 3 T. Olive Oil. Heat it over low to medium heat, stirring constantly, until it is brown and starts to fall apart and look like ground meat.

Use as ground meat in most recipes or freeze for later use.

This recipe takes a bit of extra time to fix, but it is worth it! It is like making your own vegetable burger!

ENJOY!!
