Betty Eskdale's Prize Winning Chili
by Betty Eskdale (Age: 63)
copyright 02-09-2003

Age Rating: 7 to 127

In Dutch oven on top of medium heat take
2 large onions diced
Cook gently in 3 Tbsp lard; do not let them become translucent

Add
½ green pepper chopped
2 cloves garlic chopped fine; cook gently, do not let the peppers change colour

Add
1 ½ lb hamburger
1 tsp worchestershire sauce
½ tsp dry mustard
1 ½ tsp salt
¼ tsp pepper
1 ½ Tbsp chili powder
Cook gently.

When most of pinkness is gone from the hamburger
Add (approximate sizes of cans)
14 oz crushed canned tomatoes
2 14 oz tins mushroom stems and pieces
14 oz can kidney beans
32 oz Heinz beans in tomato sauce

Let flavours blend.
Add
2 Tbsp maple syrup
2 Tbsp vinegar
1 Tbsp chopped parsley
Cook gently.
Serve from crock pot after cooking gently for about 6 hours.

This is thick. It was voted best out of 15 entries. I was very pleased and surprised because it is not spicy hot and usually "hot" wins.

I'm not surprised it won a contest, you're so detailed with the recipe that I could have cooked it!
You seem like a great cook, those judges must have lots of experience!

Thanks, Janice, a very good point. At your suggestion, I have modified it to make it more user friendly.
