Taco Chip Dip

Ingredients:

1 Bag of Tortilla chips (any kind---round work better)
1 16oz Sour Cream (any kind)
1 Packet of Old El Paso Taco seasoning mix
1 2cup bag of shredded cheese--either mexican, 4 cheese, or taco blend.
1 Head of lettuce
1 Bunch of green onions

other toppings if desired:
peppers
tomatoes
olives

Directions:
1. Empty your sour cream into a medium sized bowl and add the Old El Paso taco seasoning. (Trust me Old El Paso is the best seasoning for this, although you really can use any brand) Stir the seasoning and sour cream together till well blended. You shouldn't see any white of the sour cream.

2. Take your mixture and spread evenly over a large flat plate or cookie sheet. (I use a decorative serving plate for mine)

3. Next sprinkle your cheese over the mixture evenly. You want to cover the entire mixture.

4. Add your diced lettuce on top of the cheese. You want to make sure you chop the lettuce up very small before adding to the dip.

5. Add the green onions on top of the lettuce.

6. Put in the fridge for about 30 min and then serve with tortilla chips. (It tastes better if cold)

7. Scoop dip with chip and enjoy!

Now there are a few variations to this recipe:

1. If you don't like the toppings, or like more toppings than the ones I used, you are welcome to add whatever you would like, such as peppers, tomatoes, olives etc. When I am going to a huge gathering, I usually make 2 cookie sheets full of this and split each one in half with different toppings to please everyone.

2. If you want the dip quick and easy, you can simply mix the seasoning in the sour cream container and you are done. Forget about the toppings. You can then dip the chips in the dip whenever and however often you please. Simply replace the sour cream lid back on the container and stick in the fridge for future use! (HEY MOMS: your kids can even do this!!!)

3. One last variation I've seen is first putting down a layer of refried beans then adding the dip as described above with all the toppings on top.

Oh one more thing, if you are needing this for a lot of people all you need to do is use 2 sour creams, 2 packets of seasoning, and 2 bags of cheese. Of course you will need more toppings then too, but I think you got that point. :o)
