Mickey’s Curry Chicken

Mickey said to her husband
“Honey, I feel like eating a small cut chicken for supper”
Her husband replied “oh, Darling, not chicken again
I feel like eating red snapper fish.”
Mickey removed the skin from the chicken
Rinsed the chicken with water and 1/4 cup lemon juice
And then poured the lemon water from the chicken
Then she seasoned the chicken with her fine touch
Rubbing on a tbsp. of olive oil to smooth the meat out
Next she applied her fine 2 tbsp. Jamaican curry powder
The aroma of the flavor filled the atmosphere
She poured 2 tsp. of McCormick seasoned salt
Dashed it on for a delicious flavor
Then she added her tsp. of thyme
Good enough for a Princess and her King
As she hoped her King
Would take one bite and would not resist
Oh yes, “my favorite spice, the 3 cloves garlic crushed
Coupled with her 1 med. onion, diced.”
She then diced her 1 green sweet pepper
Leaving her scotch bonnet hot pepper (optional)
After 24 hours passed
Mickey diced 4 small potatoes into quarters
And applied it to the chicken
Added 1/4 cup of olive oil to her hot Dutch pot
And 1/2 cup water
Covered the pot and left it to simmer for 45 min. low heat
Then Mickey was cooking
Her talent was coming through
Mickey shook her hips
As she said, “my husband will not be able to resist
Chicken is what is for supper, Honey, not red snapper fish
They are both so Yummy! Yummy! Yummy!
Delicious.”
